Would you take a 3-month-old baby to Mexico for a week?

My wife's family is from near Gaudalajara (San Pedro!) and she is considering taking a trip with our new son to visit family. My concern is that my son only has taken one round of immunization shots so far. Anyone else have experience with this kind of scenario? Please refrain from making stereotypical remarks, especially if you've never been past Tijuana.
